Ditch the store-bought energy bars full of questionable ingredients and make a batch of these homemade ones for hungry snacking anytime.
I’m not a fan of energy bars. I prefer to eat real food in order to stave off hunger pains or combat low blood sugar. There is also a lot of junk in the conventional energy bars you find at grocery stores and gas stations. Most are made with highly processed ingredients and often include artificial flavours, synthetic sweeteners, cheap chocolate coatings, and soy protein (the largest genetically modified crop in the world).
While there are a few all-natural options available made with real, recognizable ingredients, those energy bars are usually extremely expensive and – let’s be honest – not nearly tasty enough to justify spending that much money.
There are times, though, when having an energy bar on hand is very convenient -- think long car trips with complaining children -- and that’s precisely when you should bust out a box of these fabulous homemade energy bars that do not contain crappy ingredients, while serving the exact same purpose for considerably less cost. These are a favourite with my family and get devoured almost as soon as they’re made.
Healthy Fudgy Energy Bars
3/4 cup honey
3/4 cup natural peanut butter
1/2 cup cocoa powder
1/4 cup skim milk powder
1/4 cup wheat germ
1/4 cup rolled oats
1/4 cup wheat bran
1/2 cup raw unsalted sunflower seeds
1/4 cup unsweetened shredded coconut
1/4 cup chopped unsweetened dates
1/4 cup chopped nuts (almonds, walnuts, etc.)
1/4 cup sesame seeds
In a pan over low heat, stir together honey and peanut butter until smooth. Remove from heat, add cocoa powder and skim milk powder and blend well. Stir in remaining ingredients. Press into a greased 9x9 pan. Chill and cut into squares. Stores well in freezer.
